Middle Eastern Salad

This is one of our favorite salads. It’s season-less, packed with flavor, and goes with nearly every main dish under the sun. It’s also a great way to use up your extra herbs before your next Imperfect box comes!
1/2 cucumber, finely diced
1/2 large red onion, finely diced
4 small tomatoes, finely diced
1 handful of cilantro, chopped
1 tsp olive oil
2 Tbsp lemon juice
Salt, to taste
Toss all ingredients together in a small bowl and chill before serving.
