Green Soup with Sweet Potato Croutons

This delicious green soup recipe comes to us from Jenna Schreck of No Whey Lady. One of our favorite recipes after an indulgent weekend, this soup is incredibly simple to make, packed with nutrients, and super colorful. Our favorite part, the sweet potato croutons, adds great texture and some extra vitamins. We hope you enjoy!

Ingredients

Green Soup

  • 2 c steamed broccoli, stems included
  • 1 steamed zucchini
  • 1/2 c steamed chard
  • 1 c chicken bone broth
  • 1/4 of a small avocado 

Sweet Potato Croutons

  • 1 sweet potato
  • 1 Tbsp high heat cooking oil (like avocado oil)
  • Spices of choice (like salt, pepper, and ginger powder)

Instructions

  1. Blend green soup ingredients and season with salt and pepper

  2. Chop sweet potato into 1/4 inch - 1/2 inch cubes (your preference here)

  3. Arrange on baking sheet lined with parchment paper
  4. Spray and coat with oil and spice to taste preference
  5. Turn oven on to 400F
  6. Put sweet potato pieces in the oven while it's preheating
  7. Once the oven hits 400F, set timer for 10 mins
  8. At 10 mins, mix pieces around on the baking sheet
  9. Put back in oven for 10 more minutes
  10. They should be done when the final timer beeps (they'll be a nice crispy brown on the outside)

Recipe Notes

Top your soup with steamed chard for some extra veggies, or bacon bits for some flavor-packed protein! Try playing with savory or sweet spice combinations on your sweet potato croutons. Keep it fairly simply with just salt, pepper, and some powdered ginger, or try some fun flavors like garam marsala.
