Broccoli Stem Salad
In the spirit of #NewYearNoWaste, our friend Victoria (@almondsandasana) shared this simple and delicious recipe starring broccoli stems, a part of the broccoli that rarely gets used, much less loved. We love "root to leaf" recipes like this and are always looking for creative ways to let the underutilized parts of produce shine. We're happy to report that this salad is easy, delicious, and may well become a staple in your waste-free weeknight dinners.
- 2 Imperfect broccoli stems cut into coins
- 1 diced avocado
- 3 Tbsp Grapeseed oil
- 1 Tbsp Lemon juice
- Salt & pepper
- 1 handful of chopped parsley
- Toss broccoli stems and avocado with vinaigrette
- Serve alongside your favorite main dishes as a crunchy accent or as a salad appetizer.
Other flavors that work really well with broccoli in a crunchy salad like this are salty things like capers or anchovies, or savory ingredients like parmesan cheese. We also love tossing some nuts like walnuts, almonds, or pine nuts in a salad like this for extra crunch and savory depth. Take the salad in another direction by dressing it with a drizzle of soy sauce, rice vinegar, sesame oil, and sesame seeds!
