Avocado Toast with a Twist

Avocado toast is like that best friend you can count on to power you through your day whenever you need a boost: funny, reliable, good for you, crunchy, creamy, savory...are we still talking about best friends? To be honest though, we've come to rely on this friend a little too much these days, so when our friend Diana (@diningwithdiana) shared this delicious twist on avocado toast, we got right to customizing our Imperfect boxes. Pomegranates, check. Avocados, check. Cucumbers, check! We hope you have fun with your new best friend, but promise to show the old one some love too!

Ingredients:

Toast:

  • 2 tbsp scallion cashew cream cheeze (recipe below)
  • 6 thinly sliced Imperfect cucumbers
  • 1/2 small avocado, sliced 
  • Squeeze of fresh lemon juice
  • Small handful of micro arugula
  • Pinch of hemp seeds (or your favorite seed-- chia, sesame, or poppy seeds work well too!) 
  • Sprinkle of pomegranate seeds
  • Salt, to taste
  • 1 piece of toast

Cashew Cream Cheeze: 

  • 1 cup raw cashews, soaked overnight
  • 1 tbsp nutritional yeast
  • 2 tbsp avocado oil
  • 1-2 tbsp fresh lemon juice (or 1/4 tsp citric acid)
  • 1/2 tsp sea salt 
  • 1 small scallion, finely minced (about 2 tbsp)

Instructions

  • For the cashew cream cheese, place ingredients into a high powered blender and blend until smooth.
  • Scrape down sides in between blending (yield: 1 cup) 
  • Slather piece of toast with cashew cream cheeze
  • Layer on cucumber slices on top of cheeze
  • Fan out sliced avocado over cucumbers
  • Squeeze fresh lemon juice on top and sprinkle on salt
  • Add micro arugula, hemp seeds, and pomegranate
  • Devour!

Recipes Notes/Variations: 

For a more delicate flavor in the cream cheese, try chives instead of scallions. Or, if you don't feel like making your own vegan cream cheese, that's fine and we won't judge you for it. You can always just mix store-bought cream cheese (or its vegan cousins) with minced scallions and your favorite herbs (try oregano and thyme!). Spices can really make the toast. If you're feeling adventurous try some smoked paprika, ground cumin, or za'atar!
